Cilantro-Garlic-Yogurt Sauce

This flavorful sauce is a must-have for summer grilling. By blending scallions, garlic, cilantro, lime, jalapeño, mayonnaise, and Greek yogurt in a food processor, you get a creamy cilantro-garlic sauce that is vibrant and versatile. It pairs perfectly with grilled steak, chicken, pork chops, fish, tofu, and is a delightful addition to tacos. As the seasons change, it also complements roasted meats during the winter months.

Ingredients:

  • 1 bunch fresh cilantro, stems removed
  • 3 scallions, trimmed and roughly chopped
  • 3 cloves garlic, minced
  • 1 jalapeño, seeds and membranes removed, chopped
  • Juice of 1 lime
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • Salt and pepper to taste

Directions

  1. In a food processor, combine the cilantro, scallions, minced garlic, chopped jalapeño, and lime juice. Pulse until the ingredients are well-blended and finely chopped.
  2. Add the mayonnaise and Greek yogurt to the food processor. Process until everything is thoroughly combined and the sauce has a creamy consistency.
  3. Taste the sauce and season with salt and pepper according to your preference. Adjust the flavors as needed.
  4. Transfer the creamy cilantro-garlic sauce to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. When ready to serve, spoon the sauce generously over grilled steak, chicken, pork chops, fish, tofu, or tacos. The sauce can also be used as a flavorful drizzle for roasted meats during the winter months.
